For Breakfast, Try This Cheddar Bacon Quiche

Put away the cereal bowl and pick up your skillet! This quiche recipe takes only 20 minutes to make, but combines the fluffiness of eggs, the salty savoriness of bacon, the ooey-gooey goodness of melted cheddar, and the sweet heat of pepper jelly into one incredibly easy one skillet meal.

Ingredients

  • 5 eggs, beaten
  • 12 ounces bacon, cooked crisp and crumbled
  • 3 cups frozen shredded hash browns, partially thawed
  • 1 cup shredded cheddar cheese
  • 1 cup Jalapeno Pepper Jelly
  • 1 cup spinach leaves, chopped
  • 1 tablespoon vegetable oil
  • 1 1/2 cups milk
  • 1/4 teaspoon salt

Directions

  • Heat the oil in a large non-stick skillet over medium heat.
  • Spread the shredded hash browns across the bottom of the pan and up around the sides, creating a pie-like crust. Cook for 5 minutes.
  • Mix beaten eggs with milk, salt, bacon, spinach, and pepper jelly, then pour the mixture into your skillet. Cover and cook for 10 minutes.
  • Sprinkle cheese over top of the quiche. Cover and cook for 5 minutes.
  • Serve with extra pepper jelly on the side.

For Lunch, Enjoy Some Smoky Southwestern Chili

Nothing helps get you over that midday hump like a serving of tasty homemade chili. Nine out of ten cowboys can’t be wrong! You can fill yourself up with this smoky, sweet, spicy chipotle-flavored dish in less than an hour. It’s got everything you need to satisfy your hunger and give you a boost of energy.

Ingredients:

  • 1 pound ground beef
  • 2 cups Southwestern Chipotle Pepper Jelly
  • 2 cups kidney beans, drained
  • 1 cup canned or frozen corn
  • 1/2 cup uncooked long-grain rice
  • 1 cup shredded Monterey Jack cheese
  • 1 cup tomato juice
  • 1/2 cup water
  • 1 garlic clove, minced
  • 4 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt

Directions:

  • Cook ground beef and garlic together in a large non-stick skillet over medium heat until brown.
  • Add in water, tomato juice, kidney beans, rice, chili powder, oregano, and salt. Cook for 25 minutes, or until rice is tender.
  • Stir in corn and pepper jelly, then cover and cook for 5 more minutes.
  • Cover chili with shredded cheese, then cook for another 5 minutes, or until cheese is melted.
  • Serve dinner rolls or cornbread.

For Dinner, Get Creative with a Skillet Stir Fry

Think you need to own a wok to make a delicious stir fry? Think again! Here’s a fun and easy skillet meal that really lets you show off your creativity. The recipe listed below is just one way to make stir fry, but really you can do it with any meats, vegetables, or other ingredients you have (pepper jelly is a must!). The limit is your imagination.

Ingredients:

  • 2 pounds of boneless skinless chicken, cut into small pieces
  • 1 1/2 cups sugar snap peas
  • 1 1/2 cups crinkle-cut carrots
  • 3 cups Habanero Pepper Jelly
  • 1/4 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 3 tablespoon ketchup
  • 3 tablespoons oil
  • 4 cloves garlic minced

Directions:

  • Dredge the chicken with cornstarch, salt, and pepper.
  • Heat the oil in a large non-stick skillet over high heat. Add in chicken and cook for 5 minutes.
  • Add in carrots and snap peas and cook for another 3 minutes.
  • Add in pepper jelly, salt, pepper, soy sauce, vinegar, garlic, and ketchup. Cook for about 2 minutes, until the sauce thickens.
  • Serve with a side of white rice or noodles.
