Breakfast is the most important meal of the day because it sets the tone. If you start your day with a delicious and hearty breakfast, chances are you will be far more cheerful than if you settled for a boring granola bar. Is there anything worse than dealing with hanger all day? I don’t think so. 

As a kid, we always wanted sugary sweet breakfast foods: big bowls of colorful breakfast cereal, warm and gooey cinnamon rolls, and pancakes drenched in thick maple syrup. But now, I have a greater appreciation for spicy breakfast foods. 

Growing up in the Jones family, we always had jars of her homemade pepper jelly on the table, which made its way into many of our meals–breakfast included. Pepper jelly fits perfectly into breakfast, whether you’re looking for a sweeter treat or something spicy.

Spicy Breakfast Burrito with Hot Peppers

Looking for a grab-and-go breakfast idea with a kick? Try our spicy breakfast burrito recipe featuring Grandma Jones’ Southwestern Chipotle Pepper Jelly. This recipe makes four breakfast burritos that will satisfy the whole family!

Ingredients: 

A spicy breakfast burrito with guacamole and salsa

  • 1 tablespoon olive oil
  • 8 large eggs
  • 1 glove garlic, minced
  • ¼ teaspoon smoked paprika
  • 1 jalapeno pepper, seeded and minced
  • ½ lb spicy sausage (removed from casings)
  • 1-1/3 cup shredded cheddar cheese
  • 1 jar Grandma Jones’ pepper jelly
  • Salt and pepper to taste
  • 4 flour tortillas 

Instructions: 

  1. Whisk eggs in a bowl with smoked paprika, salt, and pepper. Set aside. 
  2. Heat a large skillet over medium-high heat. Cook the sausage until browned, about 4 to 5 minutes, stirring frequently. Use a slotted spoon to transfer the sausage to a plate, leaving the drippings behind. 
  3. Reduce heat to low and add the eggs and jalapenos to the same pan. Scramble the eggs with a spatula. Before the eggs fully cook, add garlic and pepper jelly, stirring until well combined. The mixture will become a bit soupy but will thicken as you cook it. Stir occasionally. When eggs are finished cooking, transfer them to a bowl and clean the pan for later use. 
  4. To assemble the burritos, add about a quarter of the sausage, a quarter of the egg mixture, and sprinkle on ⅓ cup cheese. Fold in the sides of the tortilla and roll, tucking in the edges as you go. 
  5. When your burritos are rolled, lightly coat the skillet with oil and set over medium heat. Once the pan is hot, place the burritos seam-side down in the pan. Cook covered until the bottoms are golden brown, about 3 minutes. Flip and cook the other side for a few more minutes. Serve warm. 

Spicy Breakfast Potatoes with a Pepper Jelly Glaze

Whether a side or a main dish, there is no better way to start your morning than with a heaping plate of spicy breakfast potatoes. This recipe features a hearty mix of potatoes, onions, and spices that is a perfect accompaniment to your favorite eggs. 

Ingredients: 

  • 3 medium Yukon gold or red potatoes
  • 2 medium yellow onions, diced
  • 1 tablespoon of olive oil, plus more if needed
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 clove garlic, minced
  • ½ tablespoon paprika
  • 1 teaspoon cayenne
  • ¼ cup pepper jelly
  • Salt and pepper to taste

Instructions: 

  1. Thoroughly wash and cube the potatoes. Heat olive oil in a large skillet over medium-high heat. Make sure the oil is spread evenly throughout the pan. 
  2. Add the potatoes to the skillet in a single, flat layer. Cook without stirring for about 5 minutes or until the bottoms start to brown. 
  3. Add the onions, diced peppers, garlic, paprika, cayenne, and salt and pepper to the skillet. Continue cooking for 5-10 minutes until the onions and peppers are tender and the potatoes are cooked through. Stir as needed to brown the potatoes. 
  4. When your potatoes are cooked and just before serving, add the pepper jelly to the pan and toss. Let the skillet cook another minute, giving the potatoes the chance to caramelize. Enjoy the spicy breakfast potatoes while they’re hot. 

Tips: 

  • Spicy breakfast potatoes can be stored in an airtight container in the fridge for up to 2 days. Leftovers can be reheated in the microwave or in a skillet with a tablespoon of oil.

Spicy Breakfast Casserole with Sausage and Peppers

Looking for an easy breakfast idea to feed a family? This spicy breakfast casserole is a real crowd-pleaser with breakfast sausage, peppers, onions, hashbrowns, and our habanero pepper jelly

Ingredients: 

A breakfast casserole with eggs, cheese, and broccoli.

  • 1 lb breakfast sausage
  • 1 cup chopped peppers (red and green)
  • 1 jalapeno, seeded and diced
  • ½ large onion, diced
  • 2 cloves garlic, minced
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon cumin
  • 2 cups shredded hashbrowns
  • 1 cup shredded cheese
  • ½ cup Bisquick
  • 1 cup milk
  • 4 large eggs
  • ¼ cup pepper jelly
  • Salt and pepper to taste

Instructions: 

  1. Preheat oven to 400 degrees. Grease a 9-inch baking dish with cooking spray and set aside. 
  2. Cook the sausage, peppers, and onions in a large skillet over medium heat until the sausage is browned and the peppers have softened slightly about 5 to 7 minutes. Add the garlic during the last minute of cooking. 
  3. Stir the hashbrowns, pepper jelly, and cheese into the meat mix. Transfer to your prepared baking dish. 
  4. Whisk together the Bisquick, paprika, cumin, salt, pepper, milk, and eggs until smooth. Pour evenly over the sausage mix. 
  5. Bake for 45 minutes to one hour until cooked through and a knife comes out clean.
