I love meatloaf.

Then again, who doesn’t? If you’re anything like us here at the Jones household, you probably grew up with meatloaf as a mainstay staple of your diet. Your mom made it for you, or your grandma, maybe with a sweet tomato-based glaze. It may not be the fanciest dish in the recipe book, but it’s still one of the tastiest.

That’s not the only thing meatloaf has going for it, mind you. It’s also easy for just about anyone to make, it’s almost impossible to mess up, and it has a comforting nostalgic quality that makes you feel warm and relaxed.

Don’t get it twisted; “comfort” doesn’t have to mean “boring” and “easy to make” doesn’t have to mean “plain.” As we grow up, our tastes evolve and often crave more daring, complex flavors. If you’re looking for a meatloaf recipe that takes this old-school comfort food and spices it up with a new-school zing, you came to the right place. This isn’t your grandma’s meatloaf recipe. This is Grandma Jones’ Pepper Jelly meatloaf recipe!

This Pepper Jelly and Meatloaf Recipe Will Amaze You

Ingredients

For the meatloaf:

  • 1 tablespoon of olive oil
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves of fresh garlic, minced
  • 1/4 cup of fresh parsley, chopped
  • 1 teaspoon of salt
  • 1 teaspoon of red pepper flakes
  • 1 tablespoon of Italian seasoning
  • 1/2 cup of breadcrumbs
  • 2 eggs
  • 1 lb. of ground beef

For the glaze:

  • 1/4 cup of Traditional Pepper Jelly (or another flavor, if you prefer)
  • 1/4 cup of tomato ketchup
  • 2 tablespoons of brown sugar
  • 1 tablespoon of spicy brown mustard

Directions

  1. First, preheat your oven to 350 degrees
  2. Warm up the olive oil in a large pan over medium-high heat.
  3. Add in onion and bell until they are soft
  4. Add in garlic and continue heating the mixture for another minute, then remove from the pan from the burner.
  5. Pour the oil, pepper, onion, and garlic mix out of the pan into a large mixing bowl.
  6. Add in the salt, red pepper flakes, and Italian seasoning.
  7. Add in the eggs and breadcrumbs, then stir until the ingredients are fully incorporated.
  8. Add in the ground beef and mix thoroughly with your hands.
  9. In a separate, smaller bowl, combine the ingredients for the glaze and whisk them.
  10. Spray a foil-lined baking sheet with nonstick cooking spray, then place your ground beef mixture on the pan, using your hands to form it into a loaf.
  11. Brush the surface of the loaf with glaze. Don’t use it all. Make sure to leave about ⅓ for later.
  12. Bake the loaf at 350 degrees for about 45 minutes.
  13. Remove the loaf from your oven and brush it with the remaining ⅓ of the glaze.
  14. Return the loaf to the oven for another 15 minutes.
