A Chicken dish is a staple in almost any house. They are quick and easy to make, and can go with many different sides. However, eating chicken once a week for months can get boring. A fun way to spice up your chicken is by adding a pepper jelly glaze.
This recipe is so good with drumsticks, thighs and wings, but can also be used on boneless breasts. When it comes to what to serve with this chicken, you have many options; baked potato or sweet potato and some veggies, a salad, over some rice or noodles – options are truly endless.

Mix together pepper jelly and canola oil. Transfer ½ of the mixture to a container and refrigerate for later. Place chicken on a tray, add salt and pepper to the chicken. Place the chicken in a ziplock bag and pour the remaining pepper jelly mix in the bag. Knead the chicken and mixture together to coat the chicken. Let the chicken marinate in the refrigerator for a few hours (up to 24).
Preheat the oven to 350F.
Heat a large pan with olive oil.
Once hot, add the chicken to the pan.
Cook on each side for about 5 minutes (until golden brown).
In a separate small pot on low heat combine soy sauce, pepper jelly and mustard.
Whisk until the mixture is dissolved.
Remove the chicken from the pan and dispose of the excess oil.
Place the chicken back in the pan.
Brush the pepper jelly mixture on the chicken.
Now place the pan in the oven and cook the chicken for about 20 minutes or until the chicken is fully cooked.
Take out of the oven and let the chicken sit for 5 minutes before cutting.
This chicken can also be made in the air fryer, for best results consult your manual since each fryer may be different.
