Pepper Jelly Glazed Chicken

A Chicken dish is a staple in almost any house. They are quick and easy to make, and can go with many different sides. However, eating chicken once a week for months can get boring. A fun way to spice up your chicken is by adding a pepper jelly glaze.  This recipe is so good with drumsticks, thighs and wings, but can also be used on boneless breasts. When it comes to what to serve with this chicken, you have many options; baked potato or sweet potato and some veggies, a salad, over some rice or noodles – options are truly endless. Ingredients:

  • 4 to 6 bone-in chicken thighs or legs, or 4 boneless.
  • 3 tablespoons of kosher salt
  • 1 tablespoon soy sauce
  • 2 teaspoons Dijon Mustard
  • 2 tablespoons olive oil
  • 1/3 cup red pepper jelly 

 

Prep:

Mix together pepper jelly and canola oil. Transfer ½ of the mixture to a container and refrigerate for later. Place chicken on a tray, add salt and pepper to the chicken. Place the chicken in a ziplock bag and pour the remaining pepper jelly mix in the bag. Knead the chicken and mixture together to coat the chicken. Let the chicken marinate in the refrigerator for a few hours (up to 24). 

 

Instructions:

  1. Preheat the oven to 350F.
  2. Heat a large pan with olive oil.
  3. Once hot, add the chicken to the pan.
  4. Cook on each side for about 5 minutes (until golden brown). 
  5. In a separate small pot on low heat combine soy sauce, pepper jelly and mustard.
  6. Whisk until the mixture is dissolved.
  7. Remove the chicken from the pan and dispose of the excess oil.
  8. Place the chicken back in the pan.
  9. Brush the pepper jelly mixture on the chicken.
  10. Now place the pan in the oven and cook the chicken for about 20 minutes or until the chicken is fully cooked.
  11. Take out of the oven and let the chicken sit for 5 minutes before cutting. 
  This chicken can also be made in the air fryer, for best results consult your manual since each fryer may be different.

In 1999 Marcia’s grandson’s – Richard Jones III (Penn Lake, PA) and Kristopher Jones (Shavertown, PA) decided to take their Grandmother’s recipe, bottle it up, and share it with the world via e-commerce. Kris’s role in the company was head of Internet marketing, while Rick was head of product development and manufacturing. In early 2000 Rick, Kris, and their sister Jennifer attended the Fancy Food Gourmet Food Show in New York City where they met QVC Celebrity Chef Jorge Bruce. During that encounter Jennifer insisted Chef Jorge try Grandma Jones’ Pepper Jam. He loved it, which eventually led to Chef Jorge writing a 150+ recipe Pepper Jam cookbook and helping the company take Grandma Jones Pepper Jam on QVC.

As Kris remembers it, “Debuting Pepper Jam on QVC was surreal. It felt like we won a Super Bowl commercial. In less than 4 minutes we not only sold thousands of jars of product, but we affirmed that there is something very special about Grandma Jones Pepper Jam.”
