Are you looking for a delicious, easy-to-make side dish that pairs well with just about anything? Then you need to try our family-favorite cornbread casserole recipe with pepper jelly!

It’s no secret that the Jones family likes to turn the heat up on our recipes. So, we kicked the classic cornbread casserole recipe up a notch with the addition of jalapeno peppers, paprika, and pepper jelly. While our favorite is jalapeno pepper jelly for this particular recipe, our traditional flavor and habanero pepper jelly also work well in this spicy cornbread casserole.  

Here’s how you can make this easy, cheesy cornbread casserole! 

Spicy Cornbread Casserole with Pepper Jelly 

 

Ingredients:

  • 1 can creamed corn
  • 1 can whole kernel sweet corn, drained

  • 8 oz sour cream
  • 1 8.5oz box corn muffin mix
  • 1 egg, beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • 1 stick butter, melted 
  • 1-2 jalapenos, finely chopped
  • ¼ cup
  • 1 cup sharp cheddar cheese, divided 

Directions:

  • Preheat the oven to 350 degrees Fahrenheit. Grease a 9x13 casserole dish.
  • In a large bowl, combine corn, sour cream, and an egg. 
  • Mix in jalapenos, spices, salt, melted butter, corn muffin mix, pepper jelly, and half of the cheese. 
  • Pour mixture into your prepared baking dish and bake for 30 minutes.
  • After 30 minutes, sprinkle the remaining cheese on top and cook until it has set in the middle, approximately 15 to 20 more minutes. Your casserole is done when there is only a slight jiggle in the middle when you shake the dish. 

Tips:

  • This cornbread casserole recipe tastes best when served warm. 
  • For added heat, top the casserole with sliced jalapenos when you add the cheese and return it to the oven. 
  • To eliminate heat, decrease or skip the jalapenos. 
  • If you don’t have boxed corn muffin mix, you can substitute it for a homemade mix (2.8 ounces white flour, 3.2 ounces yellow cornmeal, 1 tablespoon baking powder, ½ teaspoon table salt, and 2 tablespoon vegetable oil).
