Golden puff pastry twists with cheddar and a thin pepper jelly filling

Pepper Jelly Puff Pastry Twists With Cheddar

Pepper jelly puff pastry twists are crisp, savory cheese straws with a thin ribbon of sweet heat. Spread a small amount of jelly inside cold puff pastry, add finely grated cheddar, fold, cut and twist. Chill the shaped twists before baking so the layers rise instead of melting into a flat, sticky sheet.

Why this recipe works

This recipe uses pepper jelly as a restrained filling rather than a topping. Too much jelly leaks onto the pan and can burn before the pastry cooks. Sharp cheddar brings a salty counterpoint; Jalapeño Pepper Jelly adds fresh chile character in Grandma Jones’ Medium tasting category. The result fits a soup supper, cheese board or casual appetizer spread.

  • Cooking: about 20 minutes
  • plus about 15 minutes chilling

Ingredients

Twists

  • 1 sheet frozen puff pastry, about 8–9 ounces, thawed according to package directions but still cold
  • 3 tablespoons Jalapeño Pepper Jelly, stirred smooth
  • 1/2 cup finely grated sharp cheddar, about 2 ounces
  • 1 tablespoon all-purpose flour, for the work surface, using only as needed

Egg wash

  • 1 large egg
  • 1 teaspoon water

Equipment

Baking sheet, parchment rated for the baking temperature, ruler, sharp knife or pizza wheel, rolling pin and pastry brush. Sheet sizes vary by brand; aim for a rectangle about 10 by 12 inches without forcing the pastry thin.

Allergen note: Contains wheat, milk and egg. Check the puff pastry and cheese labels.

How to make it

  1. Prepare the pastry. Heat the oven to 400°F, or follow your pastry package temperature if different. Line a sheet with parchment. Lightly flour the counter, unfold the cold pastry and roll only enough to smooth the folds and form an approximately 10-by-12-inch rectangle. If it becomes soft or greasy, refrigerate before continuing.
  2. Add a thin filling. With a 12-inch side facing you, spread the jelly across just one half of the rectangle, leaving a 1/4-inch border. Sprinkle the cheddar evenly over the jelly. Fold the unfilled half over like closing a book to form an approximately 5-by-12-inch rectangle. Press gently with your hands; do not crush it with repeated rolling.
  3. Cut and twist. Cut twelve strips across the 12-inch width, each roughly 1 inch wide and 5 inches long. Hold each strip by its ends, twist two or three times and place on the sheet with at least 1 inch between twists. Press the ends gently onto the parchment so they do not unwind.
  4. Chill and brush. Refrigerate the shaped twists for about 15 minutes. Beat the egg with the water, then brush a thin layer over the exposed upper pastry. Avoid soaking the cut edges or flooding the pan. Discard remaining egg wash after use.
  5. Bake until fully golden. Bake approximately 18–23 minutes, rotating the sheet if needed, until the twists are puffed and deeply golden, including the undersides. Do not remove them just because the cheese has browned. Cool on the pan for 5 minutes, then transfer to a rack. Serve warm or at room temperature within the serving-time limits below.

What prevents soggy pastry?

Cold dough, a thin filling and a fully heated oven matter more than extra flour. Pat away any condensation from thawed pastry. Stir the jelly instead of heating it into a runny liquid. If you see a large pool of filling during shaping, scrape away the excess before folding. A little leakage is normal; a heavy layer of jelly is not.

Choose a cheese that stays inside

Finely grate cheddar so it distributes in a thin layer. Large shreds can tear the dough and make the twists hard to seal. Gruyère is a useful alternative; a very wet fresh cheese is not a direct substitute. Check the puff pastry label if avoiding dairy, since some brands use butter and others use vegetable fat.

How to prepare them ahead

Shape and refrigerate the unbaked twists, covered, for up to a day, then add egg wash just before baking. Alternatively, freeze the shaped unbaked twists on a tray, transfer to an airtight container and bake from frozen, allowing extra time and checking the pastry package guidance. Keep raw egg wash refrigerated and make it fresh when practical.

What to serve with it

Pair the twists with tomato soup, a salad or a pepper jelly cheese board. Keep extra jelly in a small separate bowl for guests who want a stronger flavor rather than loading more into the pastry. Traditional Pepper Jelly creates a milder version, while Southwestern Chipotle gives the cheddar a smoky accent.

Storage and leftovers

These are best the day they are baked. For a conservative home-storage approach, refrigerate leftovers within 2 hours, or 1 hour above 90°F, and use within 3–4 days. Reheat on a baking sheet in a 350°F oven until hot and crisp. Microwaving softens the pastry. Cool before closing the container so trapped steam does not make the twists wet.

Frequently asked questions

Can I use a whole package of pastry?

Yes. If the package contains two similarly sized sheets, double all ingredients and use two baking sheets. Give the twists room to expand; crowding them onto one sheet traps steam.

Can I skip the egg wash?

Yes. The twists will have a less glossy surface, but they can still puff and brown. Check the pastry label and cheese if an egg allergy is the reason for omitting it.

Why did my twists unwind?

The pastry may have been warm, overfilled or twisted too tightly. Keep the filling thin, twist only a few times, press down the ends and chill before baking.

Are these the same as pepper jelly pinwheels?

No. Twists are narrow folded pastry strips designed for crisp layers throughout. Our pepper jelly pinwheels provide a separate rolled appetizer method.
